4 tbsp. butter
½ c. sugar
4 eggs, separated
1 c. flour
4 lemons, zested and juiced
2½ c. milk

Whipped cream, for serving

Directions:
Preheat oven to 350º. Cream the butter and sugar together. Add the egg yolks one by one, then add the flour. Add the lemon zest, lemon juice and milk. Mix well.

In a separate bowl, whisk the egg whites until stiff. Fold gently into the lemon mixture until incorporated. Pour into an 8- or 9-inch springform pan. Bake for 40 minutes, or until very lightly browned and set. Serve with whipped cream.
