6 chicken breasts (trimmed and skinned)
2 (12 oz.) jars marinated artichoke hearts
¼ c. grated Parmesan cheese
salt and pepper

Directions:
Directions:
Place chicken breasts and marinated artichoke hearts, including the liquid from each jar, in a large bowl. Stir together. Cover, refrigerate and let marinate for one to two hours.

Spray a rimmed baking sheet with non-stick cooking spray. With a slotted spoon, remove chicken and artichokes (removing as much liquid as possible) from bowl and place on the baking sheet. Sprinkle each side of the chicken breast generously with salt and pepper. Broil on high on the middle rack of the oven for 20 minutes. Next, flip chicken breast over, stir artichokes, and move baking sheet to the top oven rack and broil for two minutes. Lastly, flip chicken back over and sprinkle pan with parmesan cheese. Broil on top rack another two minutes or until cheese and chicken are nicely browned and chicken is cooked through.
