1 cup uncooked orzo
1 cup sliced mushrooms
1 cup diced zucchini
1 tbsp. butter
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp pepper

Directions:
Directions:
1. Cook orzo according to package directions. Drain; keep warm.
2. Heat a skillet over medium-high heat. Coat pan with cooking spray. Add mushrooms and zucchini; sauté 6 minutes. Combine orzo, mushrooms mixture, and remaining ingredients in a large bowl, tossing gently.

Yield: 4 (3/4-cup) servings

Nutritional info: 197 calories, 4g fat (2g sat fat), 34g carbs, 2g fiber, 6g protein
