5 lbs beef chuck flats
2 carrots, diced
2 celery stalks, diced
1 yellow onion, diced
32 oz Guinness beer
½ cup good red wine
½ cup tomato paste
1 whole sprig thyme
1 whole sprig rosemary

Preheat oven to 350ºF

Season beef with salt and pepper, sear to brown all sides. Saute all vegetables, tomato paste and deglaze with beer and wine. Place browned meet into baking pan, cover meat with sauteed vegetable beer mixture (be sure and add any pot roast pan juice or extra beef stock to ensure meat is covered.

Place sheet pan paper to cover and wrap with aluminum foil. Place into no fan oven for 4½ hours. Remove meat from braising juice onto pan. Blend braising juices until smooth to make into gravy. Slice roast and top with gravy. Enjoy!
