2-3 lbs beef stew meat
flour for dredging
2-3 Tbsp garlic, crushed
1 bay leaf
beef broth (enough to cover meat)
1 cup red wine
1 large can crushed tomatoes
1 can tomato paste
2 celery stalks, chopped
1 onion, chopped
chopped parsley to taste
beef stew seasoning
choice of oil
Assorted veggies of your choosing (examples: carrots, corn, zucchini, potatoes) cut into large pieces

Directions:
Directions:
Put meat into bag with flour and shake until meat is fully covered. Then brown meat in oil on stove with onion. Add bay leaf and garlic. Add beef broth until meat is almost covered. Add wine, tomatoes, tomato paste, parsley, celery and pack of beef stew seasoning.

Cook on low heat for 6-7 hours. Two hours before you are done cooking, add in your additional vegetables. If the stew is not thick enough, you can thicken it with corn starch or flour mixed with water and stirred into stew.

My Dad, Bob, grew up in Novato with my Grandma, Alyce, and his two siblings. He would tell my sisters and I how he would walk to school, up hill both ways, in 5 feet of snow with cardboard in his shoes, looking forward to coming home to enjoy some nice warm beef stew at the end of the day.
