4 chicken drumsticks
4 skinless chicken thighs
½ pound of green beans
2 Tbsp of minced garlic
½ cup soy sauce (I use Bragg amino acids)
½ cup of white vinegar
⅓ cup water
1 cup sliced mushrooms
Optional: 1 can of coconut milk
2 cups of cooked brown rice (or cauliflower rice)

Heat large skillet to medium-high. Place meat evenly spread out into pan, Pour soy sauce and vinegar over chicken, add garlic. Cover skillet and cook for 10 minutes. Flip chicken over and leave in skillet for another 10 minutes. Add water, green beans, mushrooms and coconut milk and stir all contents in pan until coconut melted. Drop heat to medium and leave covered for 15 minutes. Spoon the sauce over the chicken and vegetables. Serve over rice.

My mom, Annie Dela Cruz, was born and raised on a farm in the Phillipines. Her parents were farmers with a 4th grade education. She left that lifestyle, her parents, 8 siblings and came to America in 1968 after paying her way through college with a 4 year softball scholarship. She majored in chemistry and had a knack for food science. She made this savory Filipino dish for dinner often when I was a child. Now it has become a favorite in my household. The ingredients are simple but the dish is filling.
