1 Tbsp olive oil
4 Tbsp butter
4 chicken breasts
salt & pepper
freshly squeezed juice of 1 lemon
3 Tbsp chopped rosemary

Directions:
Directions:
Put oil & 3 Tbsp butter in skillet on medium high. Add chicken & cook briefly on both sides (less than 1 min altogether) Transfer chicken to warm plate & sprinkle with salt and pepper. Add lemon juice to skillet and simmer on medium heat for 20 seconds. Scrape loose cooking residue from bottom of pan. Add chopped rosemary and remaining 1 Tbsp butter. Stir 4-5 seconds and turn heat to low. Return fillets to pan with any juices on plate. Turn fillets over in skillet 2-3 times and cook until done. Transfer all to warm platter. Serve with veggies, potatoes or rice.
