Nana's Deviled Eggs Recipe

Mayonaise
Salt, pepper
Paprika
Option: chives chopped

1. Cover eggs in water with a pinch of salt, in a med. size pot.
2. Boil eggs till hard boiled 10-15 minutes.
3. Run cold water over pot with eggs for a few minutes. Set aside to let cool completely.
4. Can refrigerate for a few hours or overnight.
5. Remove from fridge.
6. Taking one egg at a time, tap the end of each egg to break the shell.
7. Carefully peel away the shell, trying not to damage the egg.
8. Run each shelled egg under cold water to rinse off any bits of shell.Pat dry.
9. With sharp knife, cut each egg lengthwise, carefully remove egg yolks and put in small bowl.
10. Lay egg whites on serving plate.
11. With a fork, mash egg yolks, add mayonaise (2-3 tbsps., depending on # of eggs), salt and pepper.
12. Mix till smooth, no lumps.
13. Using a teaspoon, fill each egg white with a scoop of yolk mixture.
14. Sprinkle with paprika (finely chopped chives)
15. Refrigerate till serving.
