1 bunch Swiss Chard, coarsely chopped
6 slices bacon, cooked and coarsely chopped
1 dozen Eggs
1 tsp salt, divided and to taste
½ cup parmesan cheese
2 Tbsp Ghee, divided
2 clove garlic, minced
4 spring onions, thinly sliced
¼ tsp red pepper flakes

Preheat oven to 350°. Remove leaves from stems of the Swiss Chard, coarsely chop leaves and stems. Cook bacon, drain fat and coarsely chop. In a bowl, lightly beat eggs with parmesan cheese and a ½ tsp of salt. Heat an ovenproof skillet over medium-heat with 1 Tbsp of ghee. Sauté garlic, green onions and red pepper flakes until lightly toasted. Add the Swiss Chard and cook until wilted, draining off any excess water. Add a pinch of salt and pepper to taste and the bacon, stir to combine. Add remaining ghee to the skillet and sauté until all ingredients have warmed. Add the egg and parmesan mixture and reduce the heat to medium-low and cook until the eggs are set around the edges (about 5 minutes). Transfer to oven to finish cooking for another 7-9 minutes. If desired, place the skillet under to broiler for the last minute to lightly brown the top.
