Best made from left over ham! But, you could use Italian sausage, ground chicken or turkey - just increase the amount of chicken broth.
Ham bone, with some meat left on Ham, bite size chunks 2 bay leaves Carrots, celery, onion chopped 1 can of diced tomatoes 1 can of white kidney beans Green beans, cut in half Italian spices (oregano,basil) Rotini, penne or elbow pasta Parmesan cheese

Directions: If using ham bone, cover with water in large pot, add 2 dried bay leaves. With lid on, bring to a boil and then simmer on low for about 2 hours. Leaving pot on low, remove bone, let cool for a few minutes. Take any meat that can be used off the bone and add to pot. Add any other left over ham cut in bite size chunks. Add chopped onion, and 1 cup of chicken broth. Continue to simmer for about 1 hour. Add carrot, celery, green and kidney beans, tomatoes, Italian spices. Cook till tender. (Turn up to Med. heat) Add about 1 cup (1/2 package) of pasta. Cook till al dente - about 8-10 minutes.
Serve with grated parmesan cheese.
Note: If using ground meat or sausage, brown in frypan before adding to pot. Use 2 -3 cups of chicken broth.
