4 12-inch spinach flour tortilla wraps (or flavor of choice)
2 cups of prepared hummus, any flavor (we prefer Trader Joe’s spicy hummus.)
2 hearts romaine lettuce, chopped (we like butter lettuce!)
1 cup crumbled feta cheese (the kids prefer shredded parmesan.)
¼ cup sundried tomatoes, chopped
3 Tbsp of chopped mint (We leave out)
½ cup fresh flat-leaf parsley leaves (cilantro is also a tasty option)
½ cup pitted Kalamata olives, chopped
¼ seedless English cucumber, chopped (We add a lot more!)
½ medium red onion, chopped
1½ Tbsp of red wine vinegar
3 salt and pepper to taste
Optional: add grilled chicken for extra protein

Warm tortillas. Spread each wrap with ½ cup hummus, or desired amount. Toss salad ingredients in a bowl and add the vinegar, olive oil, salt and pepper. Pile salad on hummus, tuck in sides and roll.

We found this recipe in Rachael Ray 30-Minute Meals years ago and modified it to suit our family's taste buds! We needed a tasty, quick meal to prepare and eat between work and sporting events! It has become one of our all-time favorites during spring and summer. It’s great for parties and picnics too. Enjoy!
