6-12 good size jalapenos
Kosher salt
1 brick of cream cheese, softened
Shredded cheddar cheese
Real bacon bits or sausage crumbles
Garlic powder (optional)
12-24 strips of bacon

Cut jalapenos in half, length-wise. Remove ribs and seeds with spoon. Place in bowl with a generous amount of kosher salt and water. Leave to soak at least 1 hour (the longer the soak, the less hot the peppers will be)

Mix softened cream cheese with 1 cup of finely shredded cheddar cheese and bacon bits. You can add garlic powder to taste if you'd like. Stir til well incorporated.

Rinse jalapenos and put on paper towels to dry. Fill a jalapeno half with cheese mixture and wrap one strip of bacon around the filled jalapeno. Secure bacon with toothpick. Repeat with remaining jalapeno halves. Place on cooling rack balanced on cookie sheet to catch bacon drippings. Bake in 425º oven for 25 minutes, or until bacon is crispy.

I had these in Louisiana and had to get the recipe from my friend Karen. They're very good, not too spicy, but be careful to get all the seeds out! If you have sensitive skin, wear gloves while cleaning!
