corn tortillas

FILLING:
2 cups shredded chicken
1 cup sour cream
2 cups shredded sharp cheddar cheese
1 cup monterey jack cheese grated
green onions (scallions) chopped
1 small can green chiles, drained
cilantro chopped-- lots
salt to taste
1 cup, approximately, enchilada sauce


SAUCE:
1 can tomato sauce
1 cup chicken stock
2 Tbsp chili powder
1 package Taco seasoning mix and/or cumin
2 Tbsp vegetable oil

Directions:
Directions:
Prepare sauce bringing ingredients to a boil and then simmer.

Fill corn tortillas with the mixture. Pour some of the sauce in the bottom of a 9x13 pan covering the bottom.
Place rolled enchiladas in the pan, side by side. Cover with sauce and more grated cheddar and cilantro

Bake at 350.
