1 Pillsbury foldout pie crust

5-6 tomatoes sliced

1/2 cup mayonnaise
2 cups shredded sharp cheddar cheese (shred your own, no bags)
1/2 cup chopped onion
fresh or dried basil
salt and pepper

8 Ritz crackers crushed
melted butter

Directions:
Directions:
Unfold the pie crust in a pie pan--I use a glass one.

Slice tomatoes and pat dry with paper towels. It is very important to dry the tomatoes. It not dried, the pie will be
runny. Layer the tomatoes in the pie crust.

Mix all other ingredients and spread over the tomatoes.

Top with the crushed Ritz crackers and melted butter.

Bake 30-40 minutes at 350.

I leave the topping off unless preparing for company. Still delicious without the added calories. Use the very best tomatoes you can find. I only make this pie in the summer.
