1/2 c. finely chopped walnuts, divided
1/2 c. butter, softened
1 c. flour
1 T granulated sugar
1 brick of cream cheese, softened
1 c. powdered sugar
1 tub Cool Whip, thawed, divided
2 pkgs, (4 serving size) instant pistachio pudding
2 1/2 c. cold milk

Reserve 1 Tbsp walnuts. Mix remaining nuts with flour, butter and granulated sugar until well blended. Press into bottom of 9x13 pan. Bake in 325º oven for 15 minutes, cool completely.

Beat cream cheese and powdered sugar in bowl with whisk until well blended. Fold in 2 cups of Cool Whip, spread over cooled crust.

Beat pudding mixes and milk with whisk for 3 minutes. Pour over cream cheese layer and let stand 5 minutes until thickened. Cover with remaining Cool Whip. Refrigerate for 4 hours until set. Sprinkle remaining walnuts just before serving.

To cut into squares more easily, put into freezer for 1 hour before serving.

Because not everyone in our household loved pistachio growing up, Mom would make a second 9x13 pan and substitute a graham cracker crust for the walnut crust and then substitute chocolate pudding for the pistachio. Everyone was happy!
