1 pound of Bacon or Breakfast Sausage, cooked
1/2 yellow onion, chopped, sauteed in grease (optional)
7 Eggs (I use10 Eggs)
1/2 cup Milk
20 oz. bag frozen Diced Hash Browns
8 oz brick of Cheddar Cheese, grated (2 cups already shredded Cheese)
Salt & Pepper to taste

Pre-heat oven to 350º. Spray 9x13 casserole dish with non-stick spray. Prepare bacon/sausage and onions. In a large mixing bowl crack eggs and beat milk into them, combine all ingredients into wet ingredients, bacon/sausage, onions, hash browns, cheese, salt & pepper. Pour into prepared casserole dish. Reserved roughly one cup of the cheese for topping. Bake for 35 minutes remove from oven put the reserved cheese on top and bake for another 8-10 minutes. Let it rest for 15-20 minutes before serving.
