1 pound red potatoes
1 cup green beans
1 cup corn
1/3 cup chopped sweet red pepper
1/3 cup thinly sliced green onion
1/2 cup light sour cream
2 tbsp. low-fat mayonnaise
1/2 tsp salt
1/2 tsp pepper
1/2 tsp dried oregano
1/4 tsp ground cumin

Directions:
Directions:
1. Peel potatoes, and cut into cubes. Place potato in saucepan; add water to cover. Bring to a boil; cover, reduce heat, and simmer, 15 minutes or until tender. Drain and let cool.
2. Combine potatoes, green beans, corn, red pepper, and green onions in a large bowl. Combine sour cream and remaining 5 ingredients; stir well. Pour sour cream mixture over potato mixture and toss well. Cover and chill 2 hours or serve warm.

Yield: 6 (2/3 cup) servings

Nutritional info: 111 calories, 2g fat (0g sat fat), 21g carbs, 3g fiber, 4g protein
