MEATBALLS:
20 saltine crackers, crushed
¾ c. milk
2 lb. ground beef
1 c. shredded Parmesan cheese
1 tsp. each of garlic powder, dried cilantro and black pepper

SAUCE:
2 T. pure olive oil
2-3 tsp. crushed garlic in oil
½ tsp. red pepper flakes
2 28 oz. cans crushed tomatoes
salt and pepper to taste
3 T. chopped, fresh basil or 1 tsp. dried
1 tsp. sugar
28 oz. can tomato sauce
2 lb. spaghetti

MEATBALLS: Mix the crushed saltines with milk and set aside for 5 minutes. When ready, add the soaked crackers with ground beef, cheese and seasonings, mixing very well. Divide meatball mixture into about 20-25 meatballs, according to the size you prefer and set aside. (See NOTE below).

SAUCE: Place oil and garlic in a large saucepan over medium heat and cook garlic for 5 minutes, stirring frequently. Add red pepper flakes, crushed tomatoes, salt, pepper, basil and sugar and stir. Add meatballs and bring gently to a boil. Cover and reduce heat to low; simmer for 45 minutes, stirring occasionally, until meatballs are cooked.

Cook spaghetti according to package directions; strain and keep in strainer. When meatballs are cooked, remove with a slotted spoon onto a plate, cover and set aside. Add tomato sauce to saucepan, stirring well. Add spaghetti, blending sauce and pasta until coated completely. Dish up placing meatballs on top.

NOTE: Remember the more fat in your ground beef, the more it will shrink when cooking.
