16 oz. can chunky pineapple
8 oz. can crushed pineapple
1 small box instant pistachio pudding mix
1 c. shredded coconut
1 c. chopped walnuts or pecans
12 to 16 oz. nondairy whipped topping, thawed
1 c. miniature marshmallows

Directions:
Directions:
Combine the cans of pineapple (including the juice) in a medium bowl; sprinkle the pudding mix over the pineapple and let sit for a couple of minutes. Gently fold in the coconut and nuts, and blend in the whipped topping and marshmallows. Place in the refrigerator for at least two hours before serving. Enjoy!
