4 (14 oz.) cans black beans, rinsed and drained
1 qt. chicken stock (possibly more)
4 carrots, coarsely chopped
4 celery stalks, coarsely chopped
1 onion, coarsely chopped
4 cloves garlic, chopped
2 tbsp. chili powder
12 oz. package sausage, sliced

1 c. rice, cooked to package instructions

Optional Toppings: green onions, avocado, cilantro, shredded cheese, sour cream, Tabasco

Directions:
Directions:
In a large pot, saute sausage until browned. Remove sausage from pot leaving grease to saute veggies. Add carrots, celery, onion, garlic and chili powder to pot and saute until slightly soft. Add rinsed beans and chicken stock, simmer until veggies are soft. Use an immersion/stick blender to puree soup in pot. Adjust seasonings as necessary and continue to simmer until slightly thickened. Add sausage back to pot.

Serve over cooked rice with any of the toppings your family enjoys!

If you don't have a stick blender, you can use a regular blender or Cuisanart.
