4 boneless, skinless chicken breast
3 Tbsp finely chopped shallots
3 Tbsp raspberry vinegar (good quality like Koloski Farms)
3 Tbsp butter
1 Tbsp extra virgin olive oil
salt and pepper to taste

Directions:
Directions:
Pound chicken w/ meat pounder to about ¾ inch. Sprinkle with salt and pepper on both sides and sauté in skillet with olive oil, browning both sides (about 8-9 minutes per side). Take chicken out and wrap in foil, set aside. Place the butter and shallots in same pan and sauté for about 5 minutes. Add in vinegar and cook for about 5 more minutes . Place the chicken back in with the juices from foil, coat chicken with the mixture, and cook for enough time to reheat the chicken (about 10 minutes). Serve immediately.
