1/2 cup red onion, chopped
1 T cooking oil
1/2 lb red potatoes, boiled [but not mushy] and cubed.
1 lb. corned beef, thickly sliced
paprika
1/4 cup chopped parsley

Directions:
Directions:
In a large heavy skillet over medium heat, sauté onion in oil until onion begins to soften. Add potatoes and fry until edges begin to crisp. Add corned beef, broken into pieces, and toss together over medium heat for 2 minutes. Remove to a plate, sprinkle with paprika and garnish with parsley.
