1 4 to 8 lb. beef ribeye roast
Herbs and spices as desired
kosher salt

Use a deep metal roasting pan not too much larger than the roast. Completely cover the bottom of the pan with coarse kosher salt 1/2 inch deep. Place roast on top of the salt and insert ovenproof meat thermometer into the center of the roast - not touching fat. Completely cover roast with additional salt. Roast in a 350º oven to desired degree of doneness. Remove roast from the oven when thermometer reaches 10º below desired doneness. Let roast stand 15 minutes in salt before carving. Remove roast from salt. Brush off all crystals., carve and serve.

Boneless beef rib roasts will yield about three 3 oz cooked, trimmed servings per pound.
Bone-in rib roasts will yield about two 3 oz cooked, trimmed servings per pound.
