2 chicken breasts
1 can of corn, undrained
1 can of RO-TEL (original), undrained
1 can of black beans, rinsed
1 packet of ranch seasoning mix powder
1 tsp of onion powder
1 tsp of cumin
1 Tbsp of chili powder
1 block of cream cheese on top of all ingredients

Directions:

Add all ingredients to a crockpot, and cook on low for 6 hours. Shred chicken and stir all ingredients. Dish will be white in color. Top with avocado slices and serve over rice or with tortilla chips. If doubling the recipe, use slightly less ranch seasoning and corn.

Although we are Novato natives, we recently returned from living in the Washington, D.C., area where we served our final military tour of duty. This recipe is a memento of our time on the East Coast, where, as is common for any military family, we relied on our military neighbors in order to thrive far from home. A family from another military service shared this recipe shortly after we arrived in Maryland in 2014. The recipe is easy, (fairly) nutritious, and delicious -- making it a family favorite. Now that we retired from the military and returned to Novato to begin a new phase of our lives, this recipe is a reminder of our past adventures.
