12 oz lean ground turkey
300g sweet potato, cubed
100g onion, chopped
200g bell pepper, chopped
200g zucchini, chopped
4 large eggs
cooking spray
½ tsp paprika
½ tsp cumin
½ tsp garlic powder
salt, pepper & chili powder to taste

Directions:
Directions:
Preheat oven to 350º. Spray skillet with cooking spray, add sweet potatoes and place in oven. As sweet potatoes cook, brown turkey on the stove. Add onions, bell peppers, and zucchini to turkey. Stir in spices and cook until veggies are soft. Remove sweet potatoes from oven, stir, and add turkey and veggies on top. Using a spoon, create four wells in the vegetable mix in each quarter of the pan. Crack 1 egg into each well and place skillet in the oven. Bake for another 5-7 minutes until egg whites are no longer clear.
