2 T. butter
1 medium onion, chopped
2½ lb. red cabbage
1 large apple, peeled and chopped
½ c. water
¼ c. red wine or cider vinegar
¼ c. brown sugar
½ tsp. salt
¼ tsp. pepper

Directions:
Directions:
Saute onion in butter. Shred cabbage. Mix in all ingredients. Cover pan and increase heat to high until boiling, then simmer for 45 minutes.

This recipe is from Janet Dow. She was part of the Bone Builders and Happy Hoofers programs at White Birch. She also played the cello. I tried to get her to bring her cello to White Birch and play for us; she never would. Janet passed away a year ago and her cello is with a young woman learning to play.
