1 can mild green chilies, drained and chopped
2 c. shredded Monterey Jack cheese
6 eggs
1 c. sour cream

Directions:

Preheat oven to 350º. Spread cheese in the bottom of an 8 inch baking dish. Top with chopped green chilies. Beat eggs and fold in the sour cream. Pour over the cheese. Cook 30-35 minutes. Let stand 5-10 minutes before slicing.

Ellie often brings this dish to church potlucks and it is one of my favorites. I have doubled this recipe and used a 9x13 pan. This comes together really quickly and is great for a holiday brunch. If you are adventurous, use more spicy green chilies.
