1 -2 pound Brussel Sprouts
1 Garlic clove cut into slivers
1 shallot, chopped
1 T Butter
2 T. chives finely chopped
1/4 pound slab bacon
1 T. Dijon mustard
1/4 - 1/3 cup chicken stock
¼ - 1/3 cup heavy cream

Directions:
Directions:
Trim sprouts, halve, toss with olive oil and light salt 'n' pepper. Roast cut-side down on oiled sheet pan for about 20 minutes @ 400 degrees until tender and crisp on outside.

Chop bacon and cook in skillet until brown. Remove cook bacon and bacon grease, reserving about 1 T. in skillet.

Add chopped garlic and shallots and cook in bacon grease and 1-2 T of butter until soft.

Add chicken stock and deglaze pan.

Add cream and Dijon and bring to a gentle boil. Adjust seasoning of sauce to taste and reduce to desired thickness.

Toss Brussel sprouts with sauce and garnish with bacon and chopped chives
