1 1/2 Cups of ricotta
2 Cups flour
3/4 Cup parmesan or romano cheese
2 eggs plus 2 yolks
Pinch of nutmeg
Pinch of salt

Directions:
Directions:
Place all of the dry ingredients into a big bowl and mix well. Add the ricotta and parmesan .as well as the beaten eggs, mix well to form a ball but don't over mix. Take a small amount of dough and roll it out on a well floured board into a 1/2 inch log. Cut the log into 1 inch pieces and place on a well floured pan. When all the gnocchi's are made drop them into boiling water until they float about 3 minutes, and serve with your favorite sauce. They can also be frozen separately and stored in the freezer until ready to cook.
