2 T EXTRA VIRGIN OLIVE OIL. (EVOO)
4 CLOVES GARLIC, CRUSHED AND CHOPPED
1 MEDIUM ONION CHOPPED
2 T BUTTER
1 20 OZ CAN SAN MARZANO TOMATOES
1 24 OZ JAR TOMATOE PASSATA, OR 3 C TOMATOE PUREE
ABOUT 1 CUP OF BEEF STOCK, OR YOU CAN USE CHICKEN STOCK
A SCANT TSP SUGAR
A HANDFULL OF BASIL LEAVES TORN
½ LB OF SWEET OR HOT ITALIAN SAUSAGE (WHATEVER YOUR PREFER
1 CUP PARMESAN CHEESE GRATED.
RED PEPPER FLAKES IF YOU PREFER SPICY A COUPLE SHAKES
1 T ITALIAN SEASONING
1 T GARLIC GARLIC
BLACK PEPPER AND SALT TO TASTE

Directions:
PLACE A LARGE DUTCH OVEN OVER MED HIGH HEAT WITH EVOO AND MELT BUTTER INTO OIL.
ADD GARLIC AND ONION, HEAT TO INFUSE THE GARLIC INTO THE OIL AND BUTTER, THEN ADD THE TOMATOES, PASSATA, STOCK, SALT, SUGAR BASIL, ITALIAN SEASONING, GARLIC GARLIC, BASIL SIMMER 30 MIN. ADD PARMESAN CHEESE AND STIR ADD SAUSAGE AND COOK PARTIALLY UNCOVERED 1 - 1 ½ HOURS. SERVE WITH YOUR CHOICE OF PASTA. TO THE PASTA WHEN IT IS DONE ADD 1 T BUTTER TO PASTA AND TOSS TO COAT. POUR SOME OF THE SAUCE ON THE PASTA AND ADDITIONAL PARMESAN CHEESE. PUT AS MUCH SAUCE ON YOUR PASTA AS YOU LIKE.
