1 (3-pound) boneless chuck roast, trimmed
1 1/2 tsp house seasoning (1 cup salt, 1/4 cup black pepper, 1/4 cup garlic powder)
1 onion, sliced
3 bay leaves
3 bouillon cubes, crushed
2 garlic cloves, crushed
1 (10 3/4 ounce) can 98% fat free cream of mushroom soup
14 ounce can beef broth
2 pounds baby carrots
1 1/2 pounds fingerling potatoes

Directions:
Directions:
Sprinkle roast on all sides with house seasoning. Using a skillet sprayed with cooking spray, sear roast until brown.
Place roast in crock pot and layer with onions, bay leaves, crushed bouillon cubes, garlic, and soup. Add the broth and top with carrots and potatoes.
Cook on LOW setting for 8 hours.
