8 eggs
¼ c. green onions, thinly sliced
½ cottage cheese
⅓ milk
3 c. shredded or cubed hashbrown (thawed)
2 c. mixed (fiesta) shredded cheese
Corn flakes or corn Chex, crushed
Precooked bacon bits

Directions:
Directions:
Mix first four ingredients with whisk, add potatoes and cheese, blend. Pour in greased 9 x 13 casserole dish, smooth out. Sprinkle desired amount of crushed flakes and bacon on top. Bake for about 45 – 50 minutes at 350 degrees, until set. Also you can prepare the night before and refrigerate over night, set out for 20 minutes prior to baking, if refrigerated.
