3 pkgs. tortellini (any combination)
1 c. fresh peppers (red, green, yellow), chopped
1 c. snow peas, cut into bite size pieces
1 c. small broccoli florets
1 c. sliced black olives
½ c. grated Parmesan cheese
2 T. lemon juice
1 jar basil pesto
1 bottle Ken's Italian dressing or your favorite Italian dressing

Bring 8 to 10 quarts of water to rapid boil and cook tortellini 4 minutes. Turn off heat. Before draining, put snow peas and broccoli in hot water for 30 seconds. Drain carefully and put in large bowl. Add enough Italian dressing to coat tortellini and broccoli and snow peas. Then add some of the pesto sauce, lemon juice, peppers, black olives and grated cheese. Mix well. Add more Italian dressing or pesto to taste. Refrigerate.
