Ingredients: 2 jars of organic spaghetti sauce (e.g. Rao's, Napa Valley, Mondano Italian...) 1 can organic plum tomatoes (drain liquid for a thicker sauce) 1 small can tomato paste 1 yellow pepper, sliced mushrooms (portobello,white or brown: sliced ) can add sliced onion, garlic chopped basil or Italian spices 2-3 Italian sausages ground chicken (or beef)

Directions:In a large non-stick pot, fry sliced sausage till brown on both sides. Remove, drain in a colander. Fry ground chicken, then add to colander. Saute yellow pepper (and onion) in olive oil till slightly browned and soft, add mushrooms and brown. Drain vegetables in colander. Put all ingredients back in pot and add tomato sauce, plum tomatoes and tomato paste, and basil. Simmer on low for 1-2 hours. Stir every 15 mins. and make sure heat is low enough to not burn sauce.
Let cool 5 minutes before serving on pasta.
Hint: Save any left over sauce to make chicken parmigiana. |

Notes: This is a much easier variation of my great grand mother's (Nona) sauce. She used fresh peeled tomatoes and let her sauce simmer for hours. The smell was incredible! My mom used Hunts canned tomato sauce, but this has a fair amount of salt and sugar.
