5 tbls butter
1/2# mushroom finely chopped (use a mix of them if available)
1 tbls green onion, chopped
1 tsp mixed vegatable seasoning (use a little extra) (see misc tag)
1 dash nutmeg
3 tbls whole wheat flour
1 cup milk
2 tbls sherry
5 eggs, seperated
1 1/4 cup shredded swiss cheese

In frying pan' melt butter,add mushrooms and onion,stirring until all liquid evaporates, about5 min,

Add seasonings and flour,stir until blended.

Gradually stir in milk and sherry. Blenb iin egg yolks one at a time'

In seperate bowl, beat egg whites until stiff peaks form.

Fold whites into mushroom mixture until just blended, fold in 4/5 of cheese.

Spoon mixture into buttered soufle dishes. Sprinkle remaining cheese on top.

Bake 350 for 35 to 40 min or until puffy and golden.k
