5 eggs
1/2 cup cold water
1 1/2 cup powder sugar, sifted then measured
1 1/2 cup flour, sifted then measured
1 teaspoon vanilla or lemon extract
1/4 teaspoon salt
3/4 teaspoon cream of tartar
1 1/2 teaspoon baking powder

Beat yolks of eggs well then beat 1/2 cup cold water into egg yolks. Add sugar and beat again. Sift together flour, baking powder and salt and fold into egg mixture as you would egg whites. Add vanilla.

In another bowl, beat egg whites until stiff. Add cream of tartar to egg whites when they are foamy. Fold whites into batter and pour into ungreased angle food cake pan. Place cake pan in a cold oven. Turn the oven on; set it to 325 degrees F (165 degrees C). Cook for about one hour, or until cake is golden brown.
Invert cake, and allow it to cool in the pan. When thoroughly cooled, remove from pan.
