3 cups flour
2 cups sugar
2 cups carrots, shredded
1 cup coconut
2 1/2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 1/4 cup vegetable oil
3 eggs
2 teaspoons zested orange peel
11 ounce can Mandarin orange slices, undrained

Directions:
Directions:
Blend ingredients together and beat 2 minutes at highest speed. Fold in orange slices. Bake in 350 degree oven for 45 to 55 minutes in a greased and floured 9 x 13-inch pan.

For frosting:
8 ounce cream cheese
2 Tablespoons melted butter
1 teaspoon vanilla
3 cups powder sugar
