1 cup well mashed ripe
bananas( 2 To 3) 1 tsp. lemon juice
½ cup shortening 2 eggs
1½ cups sugar 1 tsp. vanilla
⅔ cup buttermilk 2¼ cups flour
2 tsp. baking powder
½ tsp. soda
1 tsp. salt
1 tsp. cinnamon
½ tsp. nutmeg
½ cup walnuts, chopped

Preheat oven to 350º. Sprinkle bananas with lemon juice. In large mixing
bowl, cream together shortening, eggs, sugar, and vanilla.. Add buttermilk,
bananas and beat well. Add flour, baking powder, soda, salt, cinnamon,
nutmeg and beat together. Stir in nuts. Pour into sprayed 9x13 pan. Bake for
25 to 35 minutes or until knife inserted in center comes out clean. Cool
completely.
 

CREAM CHEESE FROSTING

8 oz. cream cheese, softened
1-16 oz.(1-lb.)(3½ cups) box powdered sugar
½ cup(1 stick) butter, softened(do not use margarine)
2 tsp. Vanilla extract
.

Directions:
Directions:
In large bowl, cream together cream cheese and butter
with electric mixer until creamy and smooth. Add sugar
and vanilla and beat together. Spread on cooled cake.
Will frost a 9X13 and a two layer cake and 24 cupcakes.
Can also be used as a filling for a 3 layer cake

MOM’S NOTE: It is very good with cheese frosting I sent. Beats
a cake mix any day.
