1½ c. unsalted butter, room temperature
⅔ c. sugar
2 T. chopped fresh rosemary
2 T. culinary lavender, lightly pressed in a mortar and pestle to release oils
2¾ c. flour
¼ tsp. salt
2 tsp. sugar, separated or lavender colored sanding sugar

Cream butter and 2⁄3 cup sugar. Stir in flour, salt, rosemary and lavender until well blended. Cover and refrigerate dough for 1 hour. Preheat oven to 375° F. On a lightly floured surface roll dough to 1⁄4 inch thickness and shape with cookie cutter. Place 1 inch apart on parchment paper lined cookie sheets. Sprinkle cookies evenly with remaining sugar or sanding sugar. Bake 8-10 minutes until edges are golden, then cool on wire rack.
