2 medium onions
2 tablespoons butter
1½ pounds zucchini squash
3 cups chicken or vegetable broth
½ cup half and half
⅛ teaspoon black pepper
⅛ teaspoon nutmeg
⅛ teaspoon salt
Pinch of cayenne pepper
Grated Cheddar cheese

Directions:
Directions:
Chop and cook onion in olive oil. Wash and slice zucchini. Combine onion, zucchini and broth. Bring to boil then simmer for 15 minutes or until squash is tender.

Add seasonings, put in blender and puree until smooth.

Put back in pan, add the half and half and reheat on low heat. Do not boil.

Top with Ceddar cheese.
