1 c. lard (or Crisco for longer shelf)
2¾ c. packed light brown sugar
3 eggs, slightly beaten
1 tsp. cream of tartar
1 tsp. baking soda
4 c. flour

Topping:
whole eggs, slightly beaten
crushed peanuts
cinnamon

Directions:
Directions:
Preheat oven to 350° F. Melt lard or Crisco in a 6 qt. kettle. Do not make hot. Remove from stove and stir in remaining cookie ingredients in order. Roll out on a floured surface using a pastry cloth and a rolling pin cover. Cut out cookies and brush with slightly beaten whole egg. Sprinkle with crushed peanuts and cinnamon. Bake 8-10 minutes and cool on a wire rack.
