½ c. shelled natural pistachios
½ c. sugar
¼ c. flour
¼ tsp. salt
2 large egg whites
5 tbsp. unsalted butter, melted
¼ tsp. vanilla
1 c. chilled heavy whipping cream
2 - 3 tbsp. sugar
1 lb. strawberries, sliced
Mint, to garnish

Preheat oven to 325º. Line a baking sheet with a Silpat or parchment paper.

In a food processor combine pistachios with sugar and pulse. In a bowl mix together pistachio mixture, flour and salt. Whisk in egg whites, butter and vanilla until combined.

Drop rounded teaspoons of batter about five inches apart onto Silpat. Spread into three-inch rounds with the back of a spoon. Bake for 10-12 minutes, or until golden.

Working quickly, transfer hot cookies to a rack to cool completely.

Mix cream and sugar with an electric mixer and beat until it holds stiff peaks. Store bought whipped cream can be substituted to skip this step.

Serve cookies with sliced strawberries, whipped cream and mint.
