2 tbls unsalted butter
1 onion , chopped fine
3 pounds butternut squash, cut into 1 1/2 inch squares
5 cups chicken broth
2 sprigs thyme
Pinch nutmeg
1/2 cup heavy cream
Salt and pepper

Directions:
Directions:
Melt butter in large dutch oven over medium heat. Add onion and cook until soft, about 5 minutes .

Stir in squash, thyme, and nutmeg. Bring to simmer , cover and cook until squash is tender, 20 minutes

Remove sprigs of thyme and puree in blender until smooth

Return to pot, stir in cream and heat

Season with salt and pepper to taste

Sprinkle with nutmeg, add croutons
