1 lb. penne pasta (or similar)
1 lb. Italian sausage, crumbled
2 tbsp. extra virgin olive oil
1 tbsp. butter
4 cloves garlic, chopped
12 cremini mushrooms, sliced
salt and pepper to taste
2 tbsp. all purpose flour
1 c. chicken stock
1 c. heavy cream
2½ c. shredded Italian 4-cheese blend
1 can diced tomatoes, drained
1 tsp. Tabasco
½ c. parmesan cheese
Directions:
Directions:
Cook pasta according to direction, al dente, and set aside. In a nonstick skillet, brown and crumble sausage, removing sausage once cooked, and set it aside. Return pan to heat and add olive oil, butter, garlic and mushrooms. Season with salt and pepper and saute three to five minutes until soft. Preheat broiler to high. Add flour to mushroom mixture and stir, cooking two minutes. Whisk in chicken stock and cream, bringing mixture to a bubble. Stir in two cups of cheese blend, reserving remainder. Once melted, add tomatoes. When sauce comes to a bubble again, remove from heat and adjust seasonings to taste, adding hot sauce if desired. Combine cheese sauce with sausage and pasta in large bowl, then transfer to a baking dish. Sprinkle remaining ½ cup Italian cheese and grated parmesan over the top and brown under hot broiler until golden.
