Ingredients:
Ingredients:
2 lbs medium ground beef
2 envelopes onion soup mix
2 envelopes beef oxo
Cornstarch

8-10 potatoes (judge by size of pot)
3-4 carrots

Directions:
Directions:
For ground beef
Brown ground beef in a dutch oven (remove excess fat).
Cover ground beef with water.
Add 1 envelope onion soup and 2 envelopes beef Oxo, simmer until beef is tender (about an hour).
Add enough cold water to cover beef (cold water reduces the boiling and helps cornstarch not to lump)..
Combine 3 large tablespoons of cornstarch in an 1/2 cup of cold water, when cornstarch is dissolved stir into beef. Stir and bring back to boil, add more cornstarch if not thick enough.
Put beef mixture in a bowl in the fridge if you are going to use it soon, or freeze it for future use.

For Hash
Put peeled and diced potatoes and carrots in dutch oven, cover with cooked ground beef.
Add enough water to cover vegetables 3/4 the way up.
When pan comes to a boil add an envelope of onion soup, stir and reduce heat to simmer.
Allow hash to simmer until the vegetables are tender and the liquid has thickened up and become translucent.

A pot of Hash is great with a side of fresh biscuits.
