4 tbsp. olive oil
2 lb. ground pork
1 onion, chopped
1 poblano chili, seeded, chopped
3 garlic cloves, chopped
2 (4½ oz.) cans chopped green chilis, undrained
1 tbsp. ground cumin
1 tbsp. chili powder
1 tbsp. salt
2 (15½ oz.) cans white beans, drained and rinsed
3 - 4 c. chicken broth

For Serving:
Shredded Monterey Jack, cilantro, lime wedges

Directions:
Directions:
Heat two tablespoons of olive oil in a large heavy pot over medium-high heat. Add pork and cook, stirring until crumbled and no longer pink. Set pork aside. Heat remaining two tablespoons of oil in pot and add onion, poblano, garlic, green chiles, cumin, chili powder and salt. Cook, stirring often until vegetables are tender, three to four minutes. Increase heat to high and stir in rinsed beans, broth, and pork. Bring to a boil, then reduce heat to medium-low and simmer, stirring occasionally, about 40 minutes. Serve with cheese, cilantro and lime
