2 ¾ C Flour
1 tsp Baking Soda
½ tsp Baking Powder
½ tsp Salt
1 C Butter
2 C Sugar, divided
1 Egg
2 tsp Vanilla Extract

Directions:
Directions:
In a large bowl, sift together flour, baking soda, baking powder, and salt. Set aside.
Using a stand mixer, beat butter and 1 ½ C of the sugar on medium speed until fluffy, about 2 minutes. Add in vanilla and egg. Mix for another 1-2 minutes.
Remove bowl from mixer. Using a large spoon, slowly add the dry ingredients into the wet ingredient. If needed, knead the dough with your hands to make sure all dry ingredients are absorbed. Cover bowl with plastic wrap and let chill in refrigerator for 1 hour.
When dough is set, preheat oven to 350º. Fill a small bowl with remaining ½ C sugar. Line cookie sheets with parchment paper. Roll dough into balls and roll in sugar to cover. Bake cookies 9-11 minutes, or until the very edges and bottoms of the sugar cookies begin to turn golden brown. Cookies may be puffy - this is okay, they will deflate as they cool. Allow cookies to cool on the baking sheet for 5 minutes before removing to cooling rack.
