1 C Flour, sifted
2 tbsp Sugar
½ tsp Baking Powder
¼ tsp Salt
⅓ C Butter
2-3 tbsp Milk (Sometimes a bit more)

Sift flour, sugar, baking powder, and salt. Cut in butter until fine. Sprinkle milk over mixture until dough holds together. Form a ball and press into ungreased 9 inch spring form pan evenly, and up 2 ½ inchest on the sides. Chill.
 

Cream Cheese Filling

5 8oz packages Cream Cheese, softened
1 ¾ C Sugar
3 tbsp Flour
1 tsp Lemon Rind (optional)
1 tsp Vanilla Extract
¼ tsp Salt
6 Eggs
¼ C Heavy Cream

Directions:
Preheat oven to 500º. Cream the cheese in mixer. Add sugar, flour, rind, salt, and vanilla. Beat well. Add eggs one at a time and beat well after each addition. Blend in cream. Pour into pan. Bake at 500º for 10 minutes. Reduce heat to 200º and bake 65-75 minutes until filling is almost set and golden brown. Chill.
