1½ lbs ground beef chuck
1½ lbs ground pork
1/4 cup diced [1/4 inch] celery
1/4 cup chopped flat-leaf parsley
2 eggs, lightly beaten
1/2 cup prepared ketchup
1/4 cup defatted chicken broth
1/4 cup half 'n' half
1 tsp ground cumin
Salt and pepper to taste
1/4 cup dried bread crumbs
6 strips bacon [about 1/4 lb]


Directions:

Preheat oven to 350º.
Place the ground beef and pork in a large bowl and break up into clumps.
Add the diced celery and chopped parsley.
In a separate bowl, combine the eggs, ketchup, chicken broth, half 'n' half, cumin, salt and pepper.
Add this mixture to the meat. Add the bread crumb and mix until just combined.
Turn the meat onto a foil-lined baking sheet and form into a 10x5 inch oval loaf.
Lay the bacon strips crosswise over the loaf and bake for an hour.
Let rest for 10 minutes before slicing and serving.
