1¼ c. pearled barley
1 c. walnuts
3 tbsp. fresh lemon juice
⅓ c. extra virgin olive oil
1 garlic clove, minced
½ tsp. lemon zest
salt and pepper
1 c. parsley
4 oz. crumbled feta

Directions:
Directions:
Boil barley for 25-30 minutes in salted water or follow package directions. Drain and rinse under cold water. Toast walnuts and coarsely chop. Whisk lemon juice with olive oil, garlic, zest and season with salt and pepper. Pour dressing mixture over cooked barley, parsley and feta. Mix well and enjoy!
